Handling
Kashruth doesn't end with slaughter. Kosher meat must be soaked and salted according to Jewish Law within 72 hours after slaughter. Our glatt kosher bison products are all soaked and salted and then chilled and shipped fresh (in most cases) or frozen, and packed with blue ice.
